Well, early on in the game I completed the Kelp Forest and found the sea nymph cave. They spoke of the 'Hope of Winter' and Naija said that at the time she didn't know what it ment. It was never explained later on in the game though. Did I do something wrong?

Now it occurred to me that Winter is a rebirth. Is that all it means? The rebirth of all the dead after defeating Eric?

You didn't miss anything and I would honestly don't know what it exactly means, I think Only Alec or Derek might know the answer on that.
However, what you say sounds very likely, nice find. ^^

Winter = Death
Summer -> Winter -> Summer ... = Wheel of time (NOT Robert Jordan's), the end lies in the beginning and the beginning starts with an end.
