What am I doing wrong?

I've made it to Mithalas, but after reading some of these posts, it seems like I should be further along in things like "forms" (currently I have only the "normal" form and the "Energy" form.  I only found one pet (Nautilus?).  I left the Energy Temple b/c It seemed like I was totally blocked from entering one area that appeared after I killed the Lion....  Do I have to go all the way back before I can proceed any further?

Nope, it's normal that you can't enter that area until a bit later. It's completely optinonal, too.
In your current state, is *is* possible to get at least one extra form in the Kelp Forest, but its not needed for Mithalas, and the Kelp Forest is not so easy without that form you get in Mithalas, anyways.
You also can't find any other pets, currently.
So, long story short, your next waypoint is Mithalas. Go there and kick ass.
